I never blog because I'm waiting for something exciting to say- but I was telling my sister Brooke about the soup I made last night and she said "Why don't you post the recipe on your blog?" I think that is a brilliant idea!
Last night I was craving Cafe Rio soup, but it was too cold and snowy to go out again so I made do with what I could find around the house. Here is what I came up with:
6 cups of Chicken broth
1 tsp of granulated garlic
1/2 onion chopped
4 oz can of green chili's (I put these in the food processor so they would flavor the broth and not be chunky)
1 1/2 tsp of cumin ( I love this stuff, so you may only want to do 1 tsp)
a dash of cayenne pepper
I let all this simmer for about an hour and then I scooped all the onions out and put them in the food processor so they were more finely chopped and then added them back in.
While this was simmering I boiled a chicken breast and shredded it and added it to the soup. About 5 minutes before I ate it, I added some frozen corn. When I dished it up, I added some rice that I had made for Chad and a little Cheese. If I had avocado, limes and tortilla strips I would have added those as well, but this totally hit the spot for me!
